Recipe: Super fast lentil soup

This lentil soup is so easy, it almost feels like cheating. I literally can put a pot of soup together and it's ready to eat in 20 minutes, maybe less! - without an Instant Cooker (Instapot)!

And it's pretty nutritious and filling, and really inexpensive, too.

The key is to use ONLY shelf-stable pantry staples. No chopping anything, because then there are dishes and you also need more TIME!

I know, some people only use fresh onions and garlic, but hey. sometimes you don't want to get garlic on your hands, or make your eyes water from chopping onions! So I keep these dried versions in my pantry, and they're also great timesavers. I buy them in bulk from the spice store in my nearby shuk. Ingredients:

  • 1.5 cups red lentils
  • 1-2 tablespoons dried fried onions
  • 1-2 tablespoons dried garlic
  • 1/4-1/2 teaspoon hot paprika flakes
  • salt and pepper to taste
  • 2 liters boiling water

Pick over and rinse lentils. Put lentils, dried onions, garlic, and paprika flakes in a medium size pot. Add boiling water. Bring to a rolling boil for 2 minutes, then turn the flame down, and simmer for 10-15 minutes, until the lentils are soft. Add salt and pepper, and mix well. Serve hot.

Croutons of any kind make a great addition (leftover bread makes great croutons)!

I like this soup just the way it is, but I've also been known to add leftover vegetable soup to the pot once the lentils are soft, and turn it into lentil-vegetable soup. Or sometimes I'll toss in some cooked noodles. You can also play with the spice ratios. Nothing here is set in stone -make it your own!

Early black Friday clothing deals

I've got a shopping list for Black Friday - things we planned to buy but were not so urgent that we weren't able to wait for a sale.



So now it seems like a good time to start deciding what I'm actually buying - the sales have begun!

Starting with the clothing requests, my "guys" still prefer American style pants over the more common European style worn here. So I found Pleated khakis in a very wide range of sizes on sale now! Definitely time to stock up.

We're also looking at this Sherpa-lined sweatshirt (these run a bit smaller than expected, in case you were wondering, but proved to be a favorite when I last bought it, so now more people want one!)

Another thing I have to search for is shirts with an Oxford collar. I have managed to buy some at the mall in a bigger city, but the selection was not great. So it's on the online shopping list. 

Wool-blend socks have been great for winters in Israel. If your toes are warm, your whole body is warmer. There are some great deals on kids' socks and adult socks. Get some for everyone!

Ok so I couldn't help but notice this, even though we don't need them. Some Gymboree dresses qualify for free shipping and discounts right now! These dresses last FOREVER. We still see our old Gymboree dresses around the neighborhood on little girls (they seem to go from one family to the next) and my girls are older teens now!

In addition, all beaches are closed due to the possibility of contamination from the storm and possible overflow from the sewage system.

Shortcuts: Cooking quickly and cheaply

During these trying times in Israel, we've all been forced to give up so much. It's unfathomable how much the people in this country have sacrificed. It's heartbreaking and gut-wrenching whenever we stop to think of the hostages and the murdered and the soldiers who've given their lives (which, frankly, is all the time).

And so, it seems trite to worry about my finances, and some days - I honestly don't want to worry about it. I just want to do whatever I feel I need to do - to give, to support, to survive, and even perhaps bring a smile to the face of a loved one.

And yet, it would be irresponsible of me to not acknowledge the severe economic crisis that we're facing or will be facing. On a personal level, our main source of income is not operational at the moment, though we do hope it will be able to get back to some level of functioning soon. And while we are trying to make sure we have some income during this time, it's not exactly the financial upswing I was hoping would end the fiscal year. (If you want to be supportive at this time while our main business is closed, please check out our Bagels & Locks Studios games and curriculum! And besides the finances, let's face it - it's just plain hard to muster up any energy some days. My desire to cook can be completely nonexistent on any given day! And while some of my family members don't mind spending time in the kitchen, they only have energy for baking cakes and cookies.

Don't get me wrong, cakes and cookies are GREAT. But after too many cakes and cookies, I start to feel guilty, and eventually decide we need a healthy-ish, balanced-ish meal.

Of course, there are certain requirements for these meals, including minimal cost and minimal time spent prepping. Also, it's always best if it can be popped into the oven - I don't have any energy for dealing with stovetop cooking, and many people I've spoken to are feeling the same way. 

If you need some good baking pans, and ant to order from a local store, be sure to check for deals on Wallashops! I live way out in the boondocks, but my orders have always arrived quickly!

So here goes - some of the foods I've been making home-cooked, minimalist meals:

Some of you asked for 5-minutes of prep. So here are my ideas for that:

1. Spicy Rice & Beans - in order for this to be a true 5-minute prep, you'll need to keep some shortcut ingredients on hand. Like these:


I used 1.5 cups of brown rice, 2 small cans of chili beans, and additional spices, including the fried onions and dried garlic chips pictured above (I added some smoked paprika and coarsely ground black pepper, you might want some salt too), and 3 cups of water, all combined in a casserole dish, covered tightly with foil, and then set it in the oven to bake for about 1 hour. (Oven 200C) 

Came out great. And in a pinch it's practically a full meal. And the cost is minimal - I got those beans on sale for ahout 2 NIS per can.

Note: I make this with long grain brown rice, but really you can use any rice.

2. Baked Pasta dish:

You'll need 1 bag of pasta (any kind), 1 can crushed tomatoes, dried spices (garlic, salt, pepper, basil flakes, and whatever else you want like oregano, parsley, hot pepper flakes), 1 container of cottage cheese, and about 250g of shredded cheese.

In a large pan (lasagna sized), mix the crushed tomatoes, spices, and cottage cheese. Fill the crushed tomato can with water and add that too. Now carefully mix in the dry pasta. Make sure it's basically covered - add more water if you need. Top with shredded cheese. Cover with a sheet of baking paper (I usually tear 1 sheet in half, actually) and cover that with foil. Bake at 200C for 45-55 minutes.

Note: I have made this with white pasta, whole wheat pasta, and whole spelt pasta. GF pasta is an option, too. 

Cost: This is definitely more expensive that the rice and beans, but I don't think it's exorbitant.

3. Ptitim with chicken: 

This could potentially take a a little more than 5 minutes - depends on how fast you are at cutting up chicken. You'll need: 1 tablespoon or so of oil, 500g chicken breast, half a bottle of BBQ sauce (or a small can of tomato paste, sugar, and spices, including those fried onions and dried garlic pieces mentioned above), ptitim (called "Israeli couscous" in other countries), and about 1 cup of water. First dice the chicken - you'll want small pieces. Put everything in a casserole dish - the oil goes in last. Add more water if your ptitim aren't all covered. Lay baking paper over the top and then cover tightly with foil. Bake at 200C for about 45 minutes. 

If you prefer spicy flavors instead of BBQ sauce flavor, you can use a small container of spicy matbucha instead of the BBQ sauce.

Note: Use any ptitim - regular, extra fiber, or spelt ptitim all work.
Cost: Depending on where you shop, chicken prices vary. I try to stock up when it's 20 NIS/kilo and keep it in my freezer. So 500g of chicken breast can be 10 NIS, and the rest of it - the BBQ sauce is the biggest splurge! I still think the cost is reasonable for feeding 4 or more people.

4. Ptitim with chick peas and vegetables: You'll need a bag of ptitim, a bag of frozen mixed vegetables, 1 full size can of chick peas,1 tablespoon of oil, salt, pepper, turmeric, and any other spices you like, including and the onion and garlic pictured above. First, drain the can of chick peas. Mix everything together in a large casserole dish. Add water till it's covered. Bake at 200C for 45 minutes or until most of the water is absorbed.

Note: I prefer the mixed vegetables for soup (that is sold under Rami Levy's private label) for this recipe, but any mixed vegetables will do.

Cost: frozen veggies are likely the most expensive part of this - so the cost is probably similar to the chicken and ptitim above. I think it's reasonable and goes a long way - the frozen vegetables at Rami Levy are usually about 10 NIS per bag.

PSA: Government Appointment System

 Do you have to make an appointment with an official entity in Israel?

I didn't know this, but sometime since the last time I had to go to Misrad Hapnim, some changes happened.

We used to make appointments for almost all government offices on MyVisit.com

But now, some appointments have moved over to another platform - Misrad Hapnim (Ministry of the Interior/Population Registry office) and Misrad Hatachburah (Ministry of Transportation) are now taking appointments via GoVisit - https://govisit.gov.il/he/home

I was able to get the appointment I needed for less than a month from now, in my small town. However, some services (like a standalone passport appointment - as opposed to a Teudat Zehut appointment where you can do a passport at the same time) have LONG waiting times. So make an appointment for whatever you need as early as possible, so you won't get stuck!

It's quite the stressful time here in Israel. And while I feel it's important to stay in the loop, sometimes it's also good to disconnect a bit (keep your phone on so you'll still get Home Front Command alerts) and you know how much I believe in reading books.

If you're looking to get some new books, I wanted to let you know about some options you might not have heard about, with free shipping available to Israel!

Eva's Used Books is a small olim-owned business that ships books within Israel. They don't have a massive inventory, but they do constantly refresh! Definitely check it out.

And if Eva's doesn't have what you're looking for, be sure to check out Blackwell's! On their site, the cost of delivery is included in the price of the books, and they ship from the UK. (I'm hearing from some people that they aren't currently shipping orders to Israel - we'll have to get to the bottom of this!)

The same rules apply for orders from Blackwell's as all other overseas websites - personal imports to Israel under $75 are tax-free. Orders over $75 will incur VAT and possibly other fees. I recommend ordering the equivalent of less than $75 of merchandise from any given website at one time.

Ma'anak Avodah 2022 (Reverse-Tax Benefit)



Maybe you've heard about this already, and maybe this is new information for you. There is a reverse-tax benefit in Israel for low-income families. It's called the "Maanak Avodah" or "Working Grant". The point of this grant is to put more money in your pocket if you earn less than a certain amount of money!

Please don't miss out on this if you qualify - apply as soon as possible in order to avoid disappointment later. It won't take much of your time to apply, and you can do it now, BEFORE YOU FORGET! Right now, you can still apply for the 2022 grant AND some people can also apply for the 2021 grant. 
  
Updated information for the 2022 grant: 

Who can apply for this grant?


You can apply for this grant if: 


1. You were employed or self-employed
 

2. You were 21 years of age or older, and have minor children*, or 55 years of age or above, even if you have no minor children
 

3. You did not own more than 50% of a property or rights to a property (anywhere in the world) in the 2022 tax year, other than your primary residence
 

4. If you have one or two children, or are age 55+ without children, and your average monthly income falls between 2,240 and 6,750 you may be eligible for this grant. If you are a single parent of 1-2 children (with custody of your minor children), your average monthly income must fall between 1,380 and 10,230 NIS to qualifyץ
 

5. If you have 3 or more children, and your average monthly income falls between 2,240 NIS and 7,400 NIS, you may be eligible for this grant. If you are a single parent of 3 or more children (with custody), you may qualify if your income is between 1,380 and 12,480 NIS per month.

*children who are counted are those who are under the age of 19 as of 31/12/2022

How do you apply? 


Online, if you have applied at least once in the last TWO years.

If you have not applied in the last 2 years, all you have to do is go to the post office and answer a few questions. BE SURE to bring your teudat zehut (ID card) and either your checkbook or an "ishur" from your bank that you have an account with them. Please keep any paperwork you receive at the post office and/or in the mail. 


If you have questions after you've applied, or to check the status of your application, you can check the status of your request online in your "eizor ishi", or call *4954 or or 02-565-6400 to speak with the Tax Authority. 

Your payment may arrive in anywhere from 1-4 installments.

How much can you expect to receive? 


The amount you receive will vary depending on your circumstances, and if you qualify, could be up to 13,104 NIS.

Your spouse's income may affect your eligibility, as may various other factors.


I hope this helps some of you out there! It's worth it to check if you are eligible.

Updated Post: Some Money Saving Tips

This is a repost of an old post with updates - hope you find it helpful.



In trying to help a few friends find ways to reduce their monthly expenses, I discovered a few things that may seem obvious to native Israelis, but for the immigrant (oleh) community, they may not be obvious:

1. If you get hurt or sick and think you need to go to urgent care or the ER, if you're conscious, call your kupat cholim first and get a referral. This will keep your copays and fees to a minimum (there are exceptions. Some ER visits are always fully covered but it's not a long list - see the list here). You might still have a copay (especially for urgent care), but at least you won't be stuck with huge fees. You can also try to see a doctor online via your kupat cholim and save yourself a trip sometimes.

2. You can save money on non-prescription medications by buying them at your kupat cholim pharmacy, and getting a script from your doctor will sometimes save you even more! So if your doctor says you should take a supplement - ask for it to be put in your prescription list. Or, buy supplements from iHerb, where many of them are about 1/3 of the cost of the local options.

3. Negotiate your credit card fees. Often, credit card companies will waive your monthly fee if you ask. Sometimes they'll waive it if you spend a minimum amount on the card - but it's definitely worth asking.

4. Negotiate your bank fees. Instead of paying a fee per transaction, see if you can get your fees waived, or at least pay a small flat rate monthly fee that covers all of your transactions. They call these options a "maslool".

5. Use an app (like Moovit) to pay for public transportation, but be sure to register before you get started. The apps will then calculate your monthly payment based upon the cheapest option. If you travel a lot, you'll likely see a charge for a chofshi chodshi. We have one child who pays less than 50 shekels each month to travel all over the region we live in. And another who travels further, so their bill is for a chofshi chodshi artzi. The advantage to this is if your travel habits change, you'll always just pay the best rate. So one month the one who normally pays for a chofshi chodshi artzi (country-wide pass) stayed local, so they only paid for a regional monthly pass. If you qualify for a discount fare, the app can do that too. Just give it a day or 2 to process your paperwork (you'll need to upload some proof of qualifaction for the discount). If you're a senior citizen and eligible for free public transportation, I believe you must go get a Gold Rav Kav instead of using the app.

6. Renew your passport using the online form, during the winter months. Misrad Hapnim discounts passport fees for people who do this during non-peak season. The online part is just the first step - you'll still need to make an appointment and go in. But this will save you money.

7. If you need to renew your US Passport: you will be required to do so via the mail or dropbox if you are able to do that. If you need an in-person appointment, those slots open up every Wednesday at about 3PM Israel time. Go to the Embassy website for full info. DON'T PAY someone to get you a slot. The embassy advises against using these services. You can get an appointment for FREE.

8. If you're out and about and need a quick snack, buying a single fruit (like a banana/apple/orange) from a makolet is almost always the least expensive option, and will give you a healthy burst of energy to help you get thru your errands so you can eat when you get home. 

9. Always carry a water bottle instead of planning to buy a cold drink while you're out. Best if you freeze your water bottle half full the night before, and fill it as you head out. This, and an insulated holder, will help you stay hydrated!

10. Check which day of the week your local store has "shuk day" and buy your produce that day instead of paying full price on the other days! Often, shuk day will be Tuesday, but sometimes it's Wednesday. The makolet near me has shuk day on Mondays and Thursdays, but they generally only discount a small selection - but it's still convenient.

11. If you're going to a movie, check if you can get a buy 1 get 1 free ticket deal via your credit card! Most credit cards have deals like this - some are available to anyone, others require a minimum spend in the month prior in order to activate it. Just be sure to log into your credit card app and check out the "Hatavot".

12. If you're going out to eat, it's worth checking if you can get a discount. Discount vouchers for restaurants are a great way to live it up without draining your bank account.

13. See if you can earn free things or gift cards from your kupat cholim (healthcare company)! I know Clalit has a fitness app that lets you accrue points to redeem for various prizes, including fitness equipment and giftcards to a variety of places. If you're also on Clalit, and have Mushlam coverage, just click this link from your phone to get it! Repost: Overnight Chicken

Read on for more - I started doing this because sometimes life gets crazy, and I was finding myself exhausted at the end of a long day, needing to sleep, but also really needing to get some food cooked for Shabbat. I hope you like my "cook while you sleep" post!

This post is long, long overdue!

I've been meaning to post about one of my favorite ways to streamline my Shabbat cooking.

Some of you have heard me say that I'm getting some of the cooking out of the way on Thursday night before I go to sleep by prepping "Overnight Chicken". During really busy times, this is a lifesaver!

I know a lot of people really don't like Crock Pot Chicken, but I really love the convenience of prepping food and letting it cook while I sleep. And the thing I love about overnight chicken the way I do it is its forgiving nature. I can leave it in for 8 hours as planned, or if I need to, take it out after 10 hours! It's better than Crock Pot Chicken.

So here's what I do:

I use a nice big roasting pan. I think it's one of the keys to success with this recipe. The other key to success is the baking paper. Read on and I'll explain the method I use. If you don't have a large roasting pan like this, I recommend setting aside some money to buy one. (You can even find a very affordable one - this one ships to Israeli addresses and currently has a FREE shipping option!)

THE BASIC METHOD:
Place cut up chicken in the pan.
*Season the chicken.
Cover with baking paper.
Cover TIGHTLY with aluminum foil.
Place in oven.
Turn oven on 100 C for 8-10 hours.


After it's cooked for 8-10 hours (and most likely the aroma of your Shabbat chicken is driving everyone in the house crazy), take it out of the oven.

Take a look inside the pan:

*Seasonings:

When I make overnight chicken, I default to one of two flavor profiles. And I'm completely imprecise about it. I just line up my seasonings on the counter and then one by one I shake some out onto the top of all the chicken. Obviously, this means it can vary a bit in flavor from week to week...

Flavor Profile #1: "Spicy Chicken"

For this flavor profile, I use:

Soy Sauce (I use GF soy sauce with no sugar added)
Turmeric
Granulated or Minced Garlic (lots)
Ground Ginger (not a lot)
Black Pepper (coarsely ground)
Smoked Paprika
Hot Pepper (I prefer the Chipotle version of this so it's smoked and hot - you can find it on iHerb - note that this link is my referral link)

You can leave out the soy sauce if you're soy-free, but if you do, it might be worth sprinkling a bit of salt onto the chicken with the other seasonings.

Flavor Profile #2: "Date Honey Chicken"

For this flavor profile, I use:

Granulated or Minced Garlic (don't skimp)
Ground Ginger (don't skimp)
Black Pepper (coarsely ground)
About 1/4 cup silan (Date Honey - I use the kind that is 100% dates)

 

I don't add salt to this one.
