Vegan Carrot Muffins

I promised a few people that I'd share my carrot muffin recipe, so here goes:

1 c. pureed cooked carrots
1/3 - 1/2 c. sugar
1/4 c. oil
1 tsp. vanilla
2 T. ground flaxseed, mixed with 1/2 c. hot water, (allow to sit for 5 min. before mixing into the batter)

mix the above ingredients well.

Add:
1.5 c. whole wheat flour
1/2 c. whole oats (optional)
1/2 t. salt
1 tsp. baking powder

Combine wet and dry ingredients. Mix well, but don't overmix. spoon into prepared muffin cups (I use silicone muffin cups for baking these, although sometimes I'm lazy and just bake it in a loaf pan to make carrot "bread") and bake at 350 F for about 25 min. (check to be sure they are done!)

I usually double the recipe...

p.s. you can use other things in place of the 1 cup of carrots - applesauce, shredded zucchini, butternut squash puree, banana puree, any fruit puree (can be chunky puree!) to make other kinds of muffins. Enjoy!

    Nearly every supermarket I've been in sells them, in smallish bags. Look for "pishtan" in the aisle where the dried beans, barley, rice, etc are sold. The one I buy is packaged by "Maya Teva" brand, and I grind them as needed in my coffee grinder. I've purchased them both at Rami Levi and at Yesh. I've also seen them at Shufersal, and I haven't looked anywhere else... Let me know if you find them near you! (Worse comes to worst, every self-respecting health food store sells pishtan!)

  2. About how many carrots is one cup of pureed carrots?

    1. I think about 3 medium carrots... I usually double or even triple this recipe, though, and I just make a kilo of pureed carrots at a time and freeze the extra...

  3. Made these tonight. Came out yummy! However, the consistency was off. More like a kugel than a muffin (didn't rise). I used 2 eggs in lieu of flaxseed mixture. Maybe more liquid? P.S. Can you post the recipe for your black bean cholent? Thanks!

    1. Interesting, perhaps more liquid would help! I don't know if we're at different altitudes, or if we use the same type of flour! so many factors...

      as far as the cholent recipe goes, I don't really measure anything. I'll see if I can make myself measure this week!
